Something about me that I’ve always wished I could change: I hate to cook. I’ve tried to change this.. many, many times. Eventually, I learned to wave the white flag, and instead find ways that I can maintain good nutrition while working around my aversion to cooking. One of the biggest breakthroughs for me was when I discovered the crockpot slow cooker *cue angels singing*
Simple, easy, and extremely convenient.. the crockpot is my 2nd favorite tool in our kitchen (next to my coffee maker, of course). I mean, who doesn’t want to just throw some ingredients in a pot and let it cook your meal for you throughout the day? Unless you enjoy the process of cooking yourself.. in which case, keep doing your thang. I wish I was you.
However, easing the process isn’t the only perk that slow cookers give to us who avoid cooking. Many crockpot recipes leave you with an insane amount of leftovers.. that’s another 2-3 meals you don’t have to prep or cook for. Score!! The slow cooker is also fantastic for those who find it hard to avoid opting for processed junk food at the end of the day.
Cold-weather season is a popular time for crockpot meals, so I thought I would share a few nutritious and delicious slow cooker recipes:
Honey Ginger Apple Shredded Pork
Some of you may have heard me rave about this one before. It’s my ALL-TIME FAVE! Try this.. I dare you!!
Chicken Taco Soup
To up the health factor even more, leave the optional ingredients out of it: cheese, tortilla chips and sour cream (you can sub Greek yogurt instead). The beer isn’t stated as optional, but it should be. You don’t need it. Unless you want it.. then go for it.
I would also add fresh garlic to this.. but that’s just me. I freaking love garlic.
I would use coconut or almond flour instead of all-purpose flour (white flour is stripped of all its nutritional value). And again, I would add garlic.. of course.
Brazilian Curry Chicken
If you’ve never had curry chicken before, EAT IT! My goodness. It’s amazing. And with a little Brazilian kick? It’s like a theme park in your mouth.
For my vegetarians! I don’t discriminate. Just add extra garlic 😉
Smoky Bacon Chili
Definitely not for my vegetarians. There’s a lot of meaty deliciousness going on in this dish. Mmmmm.. bacon. This is by far my favorite chili recipe.
Don’t have a slow cooker? You need one. Buy one. Now. DO IT!
